Pie Day (3.14)

Okay, I never actually get to celebrate pie day but I did get to make a pie on the first day of spring March 20th…not quite a week later.  I am obsessed with lemon curd.  YUM!  So I made a lemon meringue pie.  Where did I get the recipe you ask?  How silly of you; my new cookbook of course!  Definitely recommend.  Thanks America’s Test Kitchen!  I had people over Saturday night, so the pie was gone quicker than it took to make it…sad.  But my sorrows were soon relieved with the double chocolate chip bundt cake I made the next day.  P.S. I am training for a 1/2 marathon so might be rewarding myself with dessert a little more!  Maybe not more, but likely excuse.
